Slimming World FILLING Snack Ideas

If you're anything at all like me you don't eat little and often, you just eat often! I'm a snacker and I always have been but small snacks just don't fill me up. I like to use all 15 of my syns on Slimming world so I'm not left feeling hungry and I usually calculate in advance how many syns I'll have left over at the end of the day and plan my snacks from there.

This potato salad is one of my favourite filling Slimming World snacks. I came across it one day when I was extremely hungry and had syns left to be eaten and ingredients left in the cupboard that needed to be used! I often have this potato salad as a mid afternoon snack in between lunch and Tea as I dont usually get to eat my tea till around 7.30 due to putting my toddler to bed. With that being said depending on how big your portion this salad would make a great side dish for your tea or even a great lunch on its own.

Syns - 5.5 (2 for light mayo, 3.5 for pesto, mustard is usually 1/2 syn for a teaspoon so for the amount I use it would probably be about 0.2 which isn't really worth counting in my eyes! Syn amounts are subject to change so please check the information is up to date before embarking on your potato salad)
Ingredients - Baby potatoes, Zero fat natural yoghurt, Green pesto, low fat Mayo, Mustard, Pomegranate seeds, Cucumber.

To make this potato salad I boil my potatoes until they are nice and soft. Whilst my potatoes are boiling I grab a bowl from the cupboard and prepare my sauce. I use 4 tablespoons of natural yoghurt, 1 tablespoon of pesto, 1 teaspoon of low fat mayo and a quarter of a teaspoon of mustard and mix together. (Obviously the amounts are completely optional and you can use more or less of certain ingredients depending on your taste.) Once the ingredients are well mixed I pour the sauce on top of the baby potatoes and add pomegranate seeds and cucumber slices to complete. Often I'll add parsley or chives if I fancy even more flavouring although there's already a lot of different flavours to be going on with! It tastes delicious and with barely any preparation time what so ever this salad has become a firm slimming world favourite with me. I hope you enjoy it too.
